Mexican Chicken Nachos

Serves 8.


– 2 (14-oz) bags tortilla chips
– 3 tbs each butter and all-purpose flour
– 1 1/4 cups milk
– 1 cup shredded pepper Jack cheese
– 1 (14.5-oz) can stewed tomatoes with onion and chile, drained
– 1 (4-oz) can chopped green chiles, drained
– 1/4 tsp each salt and ground red pepper
– 1 (15-oz) can black beans, drained and rinsed
– 2 cups shredded, cooked chicken


Melt butter in a medium saucepan and whisk in flour. Add milk and whisk till smooth. Cook over medium-high heat 3 minutes. Remove from heat and whisk in cheese. Add tomatoes, chiles, and salt and pepper.

Spread the chips on an ovenproof platter and top with the cheese and remaining ingredients. Bake 10 minutes and serve warm.
