2 medium sweet potatoes, sliced
1 tbs sugar
1 tsp each sugar, salt, cumin, and chili powder
4 (5-oz) skinless salmon fillets
1 tbs olive oil
Combine sugar, salt, cumin, and chili powder.
Place potato slices on a greased rack of a broiler pan. Coat sides with cooking spray and sprinkle both sides with half the sugar mixture. Broil for 10 minutes, turning once.
Rinse salmon and pat dry. Sprinkle with remaining sugar mixture and cook in oil in a large skillet over medium heat for about 10 minutes, turning halfway through. Serve with potatoes.
